Every nonstick pan sold today is one of two things: a PTFE coating, which most people call Teflon, or a ceramic coating, which is newer and marketed as the safe one. The marketing on both sides is loud and the chemistry is quieter, so here is what the coatings actually are and the honest trade-off between them.
What Teflon actually is
PTFE is a fluoropolymer, a plastic built on carbon-fluorine bonds, and it belongs to the family of chemicals called PFAS. That family name is the one in the headlines, the so-called forever chemicals that persist in the environment and have been linked to a range of health risks. The specific compound that caused the original Teflon scandal, PFOA, was phased out of US cookware production around 2013, which is why every modern pan box says PFOA-free.
Chemists broadly consider the PTFE coating itself stable at normal cooking temperatures. The real-world caveats are two. Overheat an empty PTFE pan far past frying temperatures and the coating starts to break down and release fumes. And a scratched, flaking coating means bits of it end up somewhere other than the pan.
What ceramic actually is
Ceramic nonstick has no clay in it. It’s a silica-based coating applied through a sol-gel process, and its selling point is real: no PTFE, no PFAS at all. The trade-off is durability. The slick surface degrades faster than PTFE, and owner reviews across brands consistently describe the nonstick effect fading within one to three years, sometimes sooner with daily use.
A 2024 study that heated both coating types past 250 degrees Celsius for prolonged periods found changes in both, with the ceramic coating actually resisting heat and mechanical wear better in that test. The honest reading is that neither coating loves high heat, and both reward gentle treatment.
The actual decision
Buy ceramic if the forever-chemicals question matters to you and you’ll accept replacing the pan when the coating fades. That’s the deal, stated plainly, and making the coating last stretches it meaningfully. Buy modern PTFE if maximum slickness and longer coating life win, and you cook at moderate heat with decent ventilation.
